Ingredients for about 10-12 sweets:
6 teaspoons of wholegrain or cane sugar
6 teaspoons lemon juice filtered
3 teaspoons honey preferably organic
-3 drops of essential oil of Peppermint
-3 drops of essential oil of Eucalyptus

Start by putting a sheet of greaseproof paper on a table.
Put in a cup, suitable for microwave ovens, sugar, lemon juice and honey. Mix and put it in the microwave for a total of 2 minutes but by mixing the compound every 30 seconds more or less. As it starts to boil it will start forming a foam from the salt; make sure to pause the timer and mix it every now and than to prevent it from dripping out of the cup. When the sugar is dissolved pull out and stir continuously until it becomes more dense. At this point add the essential oils and mix again. Wait until it is warm and with a teaspoon form little drops on the sheet of greaseproof paper. Leave them cool and then wrap them up one by one with the transparent film. Instead of using the oven or microwave you can do all the process in normally in a pot mixing carefully.

RECIPE FOR SORE THROAT SWEETS WITH LEMON

Ingredients for about 10-12 Sweets

1 tablespoon honey preferably Organic
– 9 tablespoons wholegrain sugar
– The juice and the rind of a lemon, untreated and organic
– 1 decoction: Leaves of eucalyptus cut for herbal tea, lemon zest, star anise always to use herbal tea, cinnamon sticks, Liquorice roots
– A few drops of peppermint essential oil.

DECOCTION PREPARATION:
Prepare the decoction simmering it for at least 3 quarters of an hour and filtering it squeezing well the herbs, in such a manner as not to lose in the residue, part of their active principles. Having done this, now pour into a small non-stick saucepan, sugar and lemon juice.

Melt the compound taking care not to caramelise the sugar immediately. Add, little by little, the liquid in the decoction. As the water in the decoction evaporates leaving in the saucepan a syrupy solution, add another decoction and so forth untill all the liquid is finished. At this point add the honey and mix it well so that it is amalgamated to your syrup.

Keep it on the fire until the compound starts to caramelise and harden, turn off the fire and add the mint essential oil, mix once again. At this point you can form into little balls on greaseproof paper or fill half way some ice trays, let to cool to room temperature and then put in the freezer for at least a couple of hours. Wrap them one by one in food paper and keep them away from heat sources.
A sweet per day can help to alleviate a little bit the sore throat.
