Kefir is a beverage similar to yghurt that is obtained through the fermentation of milk (cow, sheep or goat) or water with kefir granules.  These granules are made out of different lactic ferments associated to probiotic yeasts that once in contact with milk, create a sort of compound very rich in nutrients, the so called KEFIRAN.  This compound containing bacteria & yeasts is able to clean our mucosa & therefore maintain our intestine clean, whole & in perfect shape.

Kefir is a concentration of beneficial substances:

  • it contains active ferments
  • essential aminoacids such as tryptophan
  • it is rich in minerals like; magnesium, calcium, zinc & phosphorus
  • it contains vitamin B9

From one end it contributes in the development of a healthy bacterial flora & on the other i keeps away harmful bacteria, providing our organism with notable benefits, furthermore it stimulates the formation of antibodies in our gut & fights constipation, candida & inflammation.  Moreover a recent study underlined the importance of kefir in reducing the so called “bad” cholesterol.  Infact they have study a Masai African tribe, whos diet was very rich in animal protein but nevertheless a very low cholesterol level due to the large consumption of kefir.

HOW CAN WE USE IT?

It is ideal to consume kefir once a day for breakfast with whole grain cereals, this way we clean well our bowel, that as we know is one of the main organs of our body  and also the place were we produce 95% of serotonin, (the famous happiness hormone).

Kefir is also good in salty dishes, for example with meat, fish or vegetables, or even flavouring it with spices & herbs; added to meals it helps us absorb protein & digest with more ease.

The probiotics found in kefir increase in power if combined with fibres, for example for breakfast we combine kefir with a fruit & oat flakes, or honey & cocoa, it becomes & super nutritious & super healthy breakfast or snack.  With these types of combinations we avoid glycemic peaks & help our bowel absorb less fat & sugar.

We must choose it well however & when we go and buy it we should spend some time reading well the label & understanding well what is inside, a good kefir infact must be natural & without any additives, possibly biological & only with specific milk & ferments, if you find a kefir which label reads ingredients like: liquid sugar, dextrose, stabilizers, aromas, & acidic correctors its better to place it back on the shelf because they are all artificial ingredients that should be avoided.  The positive effects of kefir are only manifested if the product is natural & of good quality otherwise we risk eating something that will do anything but good.  Furthermore the taste of kefir is not liked by everyone since it is quite acidic (sour) in taste.
