What is vitamin B12 & why is it so important?

B12 is a water-soluble vitamin.  It is found in various forms all of which contain Cobalt: That is why they are grouped under the definition of Cobalamin.  The main function of vitamin B12 is to give a helping hand towards critical chemical reactions inside our organism, which produce hormones, protein, lipids & red blood cells.  It also ensures an adeguate neurological function in the human body.  Vitamin B12 shortages caused by inadeguate assumption or physical disorders, usually manifest themselves in: weightloss, weakness/tiredness, depression, dementia, lack of appetite & megaloblastic anemia.

What is the recommended daily allowance (RDA)?
Calculated on a 2000 calorie diet the rda for vitamin B12 is 6mcg, however there is no maximum tollerable level since it has a very low to no toxic potential.

Foods containing vitamin B12

Beef Liver

Beef liver gives us a very large amount of vitamin B12, the correct quantity for beef liver is 85g but we can reduce it to 60g giving us 48mcg of vitamin B12 & 216 mg cholesterol.

Bivalve molluscs

Molluscs are a great source of iron, manganese, selenium, vitamin B12, copper, phosphorus, ribolflavin & vitamin C.  You don’t like much the consistency of this food?  No worries: A study discovered that 72% of the vitamin B12 found in molluscs can be also found in their broth so how about a nice mollusc broth or soup?

Liver Salami/sausage (Braunschweiger)

The peculiarity of this type of salami is its consistence, also spreadable, liked also by those who do not like the consistence of liver.

Crab

According to the type of crab, the edible pulp extracted varies between 10 to 25% of the weight of the crab.  Crabs are a good source of copper, selenium, vitamin B12, zinc, iron, magnesium, niacin, phosphorus, riboflavin & vitamin C.  Recent studies have showed how the consumption of shellfish, including crab reduce the possibility of developing type B diabetes that means, the higher the consumption of shellfish the lower the possibility of developing that type of diabetes.

Sardines

Sardines were the first fish to be put in cans, are a good source of calcium, niacin, omega 3, phosphorus, selenium, vitamin B12, iron, vitamin B2, B6 & zinc.  Fish consumption has many benefits but also some risks, therefore always make sure where you purchase your fish from & the controls & checks it has gone through.

Oysters

Cooked oysters are a good source of copper, iron, selenium, vitamin B12, zinc, magnesium, phosphorus & riboflavin.  An Italian & American research team, showed how these molluscs help stimulate the release of testorene & oestrogen.  This could scietifically prove that oysters actually improve libido.

Red Salmon

A low level of vitamin B12 in pregnant women was linked to an increase in infant crying.  And a continuously crying baby could be very stressfull.  A study showed that a reduced level of omega 3 fat lead to post-natal depression, therefore cosuming 2 portions of red salmon per week could be the right solution for mother and child.
