HUMMUS: hummus is a very tasty preparation that must be accompanied with bread or raw vegetables. The main ingredient of humus are chickpeas, which are boiled and crushed or blended to obtain a homogenous easily spreadable cream. There are various recipes of humus, let us see the traditional one.

TRADITIONAL HUMMUS RECIPE

-2 Tablespoons tahina sauce (is found in the ethnic foods section, or by preparing simply blending 3 tablespoons sesame seeds lightly toasted in a pan as first ingredient)
-1 tin of chickpeas already cooked
1 tablespoon flax seeds
– Half a lemon squeezed
– A handful of parsley
2 tablespoons of extra virgin olive oil cold pressed
1 clove of garlic, possibly fresh
1 pinch of salt and pepper

The ingredients are put simply one at a time in the blender and if the consistency is too dense it is necessary to add a little water a bit at a time.

The consistency must be creamy and homogeneous.

GUACAMOLE: Guacamole is a good idea as an appetizer to accompany crackers, tortillas or even just vegetables.

Ingredients:

-4 avocados
-2 lime
1 pinch of salt

Divide the avocados in half and pull the core. Peel the fruit, extract the pulp, cut into cubes and squash with a fork in a bowl until forming a puree. Grate a small part of lime zest, squeeze the fruits and add everything to the mashed avocado. All you must do is mix well to amalgamate and finalize your homemade guacamole sauce maybe with some tomato cloves if you like.

GAZPACHO: Gazpacho is excellent as a soup, an appetizer or as an accompaniment to “Pinzimonio” vegetables it is suitable in summer and spring but is always excellent and a typical Spanish dish, appreciated especially in Andalusia. Sometimes it is served with ice cubes.

Ingredients for 6-8 persons:                                                                      gazpacho soup

– 1 kg of ripe and juicy tomatoes
-½ white onion
-1 green bell pepper
-1 cucumber
-1 pinch of ground cumin
– 3 tablespoons of red wine vinegar
– ½ tablespoon salt
-200 grams of extra virgin olive oil
-½ stale bun

Wash the tomatoes and slice them, peel the garlic, peel and divide into 3 or 4 parts the onion. Wash the pepper, slice it and remove the seeds. Peel the cucumber .Soften the bun by immersing it in water and strain it as much as possible. Whip all the ingredients in order to obtain a compound with a creamy consistency. Let the gazpacho rest in the fridge before serving, in Spain some people add some ice cubes but it is definitely not for everyone.

 TZATZIKI SAUCE: The tzatziki sauce is a typical Greek dressing based on yogurt and cucumbers, which is usually flavoured with garlic and chopped dill based on greek yogurt or vegetable yogurt without sugar.

 Ingredients:

– 250 gr of greek yoghurt
2 tablespoons of extra virgin olive oil
– 2 cloves of garlic
2 teaspoons chopped dill
1 cucumber
1 teaspoon vinegar
1 pinch of salt

Slice the cucumber into cubes, without peeling or chop it coarsely and let it drain. Finely chop the garlic and dill. Mix the greek yogurt and extra-virgin olive oil using a spoon and a whip. Add salt vinegar, chopped garlic, dill, a pinch of salt, stir well to make it creamy and serve.
