Amaranth

Amaranth is a very good source of protein &, like Quinoa it contains a much higher quantity of aminoacids than any other cereal.  It is also an excellent source of Magnesium, Manganese & Phosphorus & a good source of Copper, Fibre, Iron & vitamin B6.  It has more nutrients (fibre, iron & magnesium) than any other gluten free cereal.  Amaranth also contains polyphenols & tannins, that can help against various sorts of tumors & heart dieseases.  It is also rich in Lunasin an antitumoral peptide.

Barley

Its Beta-Glucans reduce cholesterol, help monitor blood sugar, improve immunitary system functions; some researches suggest how the same Beta-Glucans can help protect the healthy cells from being damaged during chemiotherapy, radiotherapy & nuclear exposure.  Other benefits barley offers are the reduction of blood pressure, reduction of LDL cholesterol, a support in the monitoring of  blood glucose, a major satiety feeling, reduction of abdominal fat & a possible reduction of heart diesease.

Oats

Wheter it is ground, instant or done the old way, all the forms of oat contain 3 major ingredients that characterise a whole grain.  Oats contain phenolic alkaloids called avenanthramides which are antioxidant, anti-inflammatory & anti-itch, thats why  oat bath are suggested.  No other cereal was studied in so much detail for its capability of reducing LDL cholesterol, this way reducing the risk of cardiac dieseases.  It also lowers blood pressure, helps in weightcontrol & offers a feeling of satiety & blood glucose monitoring thanks to its fibre content.

Quinoa

From a botanical point of view Quinoa is part of the beet & chard family, & is technically not a real whole grain.  Apart from most of its other nutrients it is one of the few edible plants to be considered an entire protein, because it contains all the essential aminoacids required.  Researches on Quinoa are relatively new; and its benefits so far are the reduction of the risk of diabetes & the satiety feeling.  Quinoa also contains a high quantity of Potassium compared to all other whole grains & this helps control blood pressure.

Teff

Being very small in dimension we will never have to worry that the outer bran part was removed from teff since it is too small to grind.  Teff is almost unknow out of Etiopia, India & Australia, but is slowly becoming more popular especially in the Netherlands due to its versatility & the great benefits it offers to our health; like weight control, blood glucose management & colon health.

Triticale

Triticale is a relatively new  hybrid cereal deriving from wheat & rye invented in Scotland over a century ago in order to grow in less favourable climates.  The first attempt produced a sterile cereal but than a german botanist perfectioned its hybridization process.  After having been very popular during the ’70s it seemed to have been put aside.  This cereal is very good for organic cultivation, because it requires very little to no pesticides & reduces soil erosion.  Triticale is an excellent source of fibre & manganese & also a good source of Copper, Magnesium, phosphorus, niacin, protein, thiamine & zinc.  Its health benefits are similar to the ones found in Rye such as, blood sugar management, weight control, bowel regularity & more.  It was also discovered recently that the triticale bran has prebiotic properties (helps in the growth of good bacteria).  It is also set on a high position on the ORAC (Oxygen- radical- absorbance- capacity) scale, a system used to determine antioxidant activity.

Wheat
