What is Gluten? Why should we eat Gluten Free?

The Low gluten diet is becoming very popular even in Italy.  While many people who follow this type of diet have been diagnosed with Celiac Diesease or Gluten sensitivity, others think that it is just another healthier  way of eating, although so far there are no scientific demonstrations regarding. For celiacs (approximately 1 in every 100) eating gluten free is an absolute must.  Celiac diesease is a genteical autoimmune disorder, characterised with an immune response to gluten, protein found in cereals like, barley, rye, wheat & its similar like, triticale, spelt & kamut.  Semolina, cous cous, bulgur & grain are also other types of wheat so they also contain gluten.  If swallowed, gluten causes an allergic type of inflammation.  Continuous increasing necessities & also interest created a fast expanding gluten free food market, with also very noteable sales revenue.

Amaranth

The taste of this cereal is similar to a walnut & offers a crispy touch to every dish.  We can find it for sale as flour or seeds.  It also contains squalene an antioxidant that can help the prevention of tumor growth & also reduce high cholesterol levels.  This powerful cereal also helps controling high blood sugar levels.

Buckwheat

Buckwheat is actually a fruit: its seeds are linked to those of Rhubarb, and bees also produce honey from its flowers.  Its flakes are usually used in western Asia & eastern Europe.  Buckwheat is an excellent source of magnesium & choline.  It also contains many group B vitamins, fibre, manganese, selenium, vitamin E and zinc, & its also rich in phenolic acid,  lignan phytonutrientsed, phytic acid & rutin.  Some experiments held out on humans & animals showed how Buckwheat helps against diabetes, obesity, hypertension, hypocholesterolmia & constipation.

Millet

Millet is a tiny yellow in colour granule with a delicate sweet taste.  Its a good source of choline & contains many nutrients such as: Magnesium, Maganese, phosphorus & zinc.  Millet also contains lutein & zeaxanthin, ” carotenoids that are essential for our eyesight & also help protect from macula degeneration.  Like many other whole grains, Millet helps in monitoring cholesterol & blood sugar levels.

Oats

Usually people who must follow a gluten free diet are told that Oats contain gluten.  The truth is that this cereal is & has always been gluten free.  It can only be to blame if it might have been in contact with other cereals containing gluten during the production stage of oat based products, or else being transported in containers that had previously transported cereals containing gluten. The solution? look for gluten free certified brands & products!

Quinoa

Due to its proteins & fibre content one of the main priveleges of eating quinoa is the satiety feeling that it guarantees.  Quinoa also contains different saponin variants, which have antinflammatory & anti cancer properties & also help in cholesterol absorption.
Quinoa was a very important element for many ancient civilizations it has been cultivated on the Andes since 3000 B.C.

Sorghum

There are many different types of Sorghum, but the one we use as a cereal is technically considered a herb.  Although it is part of the food in Africa in other places it is used for feeding animals.  Only recently it has spread towards western regions as an excellent alternative to whom is allergic to gluten.  A recent study on the sorghum cells discovered that it contains a great variety of flavonoids & proanthocyanidin used to inhibit aromatase, an fundamental enzyme for the production of estrogen.  These are commonly used for the treatment of breast cancer.

Teff

Teff is mainly used in native Africa but is also a very popular gluten free cereal in the Netherlands.  During a study held out on 8000 members of the Dutch Celiac Diesease Society, Teff was considered as a favourite by celiacs, & they also noted a considerable reduction of the symptons & declared to feel better after consuming this cereal.
